Opis

The top lock nut and spring control the grinding and refining functions of the machine. When it is tightened, the stone wheels are closer to the base of the stone and, through a shearing action, the chocolate particles are broken up. If, on the other hand, the lock is loosened, little or no pressure is exerted on the stones, resulting in the unit operating in refining or conching mode. While the particle size of the chocolate will not change, the refining process will affect the organoleptic profile of the chocolate.

This part is made of hard plastic and stainless steel and fits all melangers (countertop models).
